Roast Mingguang Small-ear Pig Pork
Mingguang small-ear pig, a small plateau kind suitable for feeding in the cool mountainous areas, is native to townships in northern Tengchong County, Yunnan Province. It is intensively produced in Mingguang Township, hence its name. The pig was included in the Annals for Livestock and Poultry Breeds in Yunnan Province in 1980 and the National Catalogue of Livestock and Poultry Genetic Resourcesin 1986. It is also known as a “bacon” pig since it has a high percentage of lean meat compared to other breeds. The pigs enjoy free-range habitat and are characterized by their slow growth. The roast pork is salty with a bit of sweetness. It is rich in protein, fat, carbohydrates, calcium, iron, phosphorus and other nutrients, and has the functions of replenishing deficiency and strengthening the body, nourishing yin and moisturizing dryness, enriching muscles and nourishing skin.
